The best pastry in St Malo ?

If you ever get the chance, visit the unique city of St Malo, North Brittany. Once a city of legend, corsairs and merchants bringing back cocoa, spices and tea, it is still a country of adventurers and a beautiful city on the sea.

st malo old city walls The old city part is a must see. From the outside, you’ll be astonished by the granite walls and buildings. When you enter in the old quarter, you’ll get this strange feeling of what it’s like to have to fight against the storms and the ennemies.

But another very good reason to come to St Malo is to try a nice speciality : the Ker Y Pom (a baked apple in a sugar crust dough dome).

Easy to make at home :

1- Prepare the dough : mix the flour, 2 egg yolks, soft butter, sugar and salt and shape in a ball. Leave for a rest for 20 min. Roll it down to the same thickness as you would do for a tart and cut out 4 circles of 10cm diametre and 4 circles of 15cm diametre.

2- Peel 4 apples, slice them and place them in the center of the 10cm dough circles. Sprinkle with sugar, cinamon, chocolate chips or even rum. Cover with the 15cm circles.

3- Eggwash for a nice finish and bake for 20 min at 180°C (thermostat 6).

Ingredients list : 4 apples, 160g flour, 3 egg yolks, 130g butter, 50g sugar, salt, 100g chocolate chips or cinamon or rum.
